A junmai ginjo brewed with Gin-no-Yume, Kochi's own sake rice — a nama (unpasteurized) sake released only during the new-sake season
Gin-no-Yume is the first sake rice ever developed in Kochi Prefecture: the Kochi Prefectural Agricultural Research Center handled the breeding, while we at Suigei conducted the brewing trials.Through repeated testing, a variety ideally suited to sake brewing in Tosa (the old name for Kochi) was born.

Summer Limited Ginrei—Light Junmai Ginjo that You Can’t Stop Drinking in Summer
The Ginrei series is Suigei’s major line, and this sake, in particular, is offered only in summer. The standard Junmai Ginjo Ginrei is brewed with Kumamoto kobo yeast KA-1, but this one is made with KA-4 that pro-duces a high acidity and clean flavor.
