Gin-no-Yume is the first sake rice ever developed in Kochi Prefecture: the Kochi Prefectural Agricultural Research Center handled the breeding, while we at Suigei conducted the brewing trials.Through repeated testing, a variety ideally suited to sake brewing in Tosa (the old name for Kochi) was born.The name Koiku No. 54 comes from Koiku Sake No. 54, the trial number given to Gin-no-Yume during its breeding.
Tasting Notes
Crisp acidity and the bold flavor typical of nama (unpasteurized) sake define this bottle.Umami spreads generously across the palate, and a sharp, clean acidity tightens the finish — a true expression of Tosa nama sake.It can be enjoyed only during the spring new-sake season.
