To make this plum sake, we use the large-sized Kobai plums grown in the Kagami district, north of Kochi City. These plums are immersed in Suigei sake that has been brewed for the table, along with rock sugar and shochu, for a prolonged period of time allowing the essence of the fruit to be brought out completely.
