Premium, long-aged sake made by taking Mann, Suigei’s flagship junmai daiginjo genshu (undiluted sake), and maturing it quietly and completely at a low temperature
Junmai Daiginjo Mann is the quintessence of Suigei. We use Yamadanishiki, the highest regarded sake rice harvested in the prestigious “Special-A” fields in Hyogo Prefecture, milled until only 30% of the rice grain remains, and brew it at a low temperature slowly and with care. To produce Shinn, we mature the sake for over three years close to freezing. Through the years-long maturation, the sake deepens its flavor and develops a mellowed aging character while retaining the beautiful features of a junmai daiginjo, which are elegant, sophisticated, and profound.
Tasting Notes
Shinn epitomizes the “subtle aging aroma” and “mild acidity” obtained through prolonged maturation. It perfectly accompanies umami-rich dishes with subdued sweetness, such as the sashimi of red-fleshed fish.
