Hattannishiki is one of the sake rice varieties often used by Suigei. We mill it until 60% of the rice grain remains to create a junmai sake that perfectly expresses the umami of the rice. Aiming for a great balance of taste and aroma, we use Suigei’s traditional Kumamoto kobo. We brew this sake with house-made koji slowly and carefully at a low temperature. Refrigerated after bottling, it’s shipped to order.
