Kochi Prefecture, a major production area for citrus fruit, not only grows yuzu—Kochi is Japan’s number one yuzu pro-ducer—but also other citrus varieties according to the season and region. Suigei Liqueur “Kaju"Yuzu is made from the juice of three kinds of citrus—yuzu, konatsu, and naoshichi (a type of sudachi)—and Suigei's sake. The number 39, repre-sents the percentage of citrus juice in the liqueur.
