Brewing
Details
We carefully select all of the ingredients—rice, water, and kobo—to brew this sake. We use 100% Gin-no-Yume, sake rice developed in Kochi Prefecture, mill it until 60% of the rice grain remains, to capture the best of its umami. Also, the most distinctive feature of this sake is that we use local “Kagami no Meisui”, water that has long been known for its premium quality.
Tasting
Notes
What’s supreme in this sake is the balance of crisp sourness and umami. Gin-no-Yume rice is known to bring out a refreshing acidity, and this feature is highlighted well in the sake while maintaining a rich junmai umami. Gin-no-Yume is a strain of Yamadanishiki, and thus it inherits a mellow flavor unique to this premium sake rice. We take advantage of this feature to craft a well-rounded sake with a soft texture.
