Ginrei is the first brand created by Suigei to bring ginjo sake to the market, and it’s still one of our major junmai ginjo sakes. Using our time-honored techniques and experience, we bring out the best taste from our ingredients. We use Ginpu sake rice, mill it to 50%, and brew it with house-made koji at a low temperature slowly and with care.
Tasting Notes
The sake exhibits a nice harmony of acidity unique to Suigei and umami from the ingredients, which combine to produce “a complex flavor with a sharp finish”. By expressing each of the “five tastes”, including sourness and bitterness, we have created a broad flavor profile. Its subtle aroma helps bring out the flavor of the dishes it accompanies.
